Baking a Sustainable Future
In the Netherlands, Bakkersgrondstof (“Bakery Ingredients”) leads by example of circular food practices with a focus on bread - a staple in many households. By collecting unsold bread from regional bakeries, they grind it into breadcrumbs. The best quality crumbs will be fermented and made into new bread. Whereas, the left-over crumbs go into chicken feed, the eggs of these chickens find their way back to the bakeries where they are used in baking goods or just sold in egg cartons.

Looking to the future
Currently, Bakkersgrondstof has a plant up and running in Wageningen from where they provide their services for two regional bakeries. The amount of bread which they process into fermented bread-crumbs and chicken feed amounts to  18,000 kg per month.
Bakkersgrondstof is already making an impact but is hungry for more. That’s why at this very moment new funding partners and sustainable clients can partner up to fund the first full service bread processing plant. This will bring the amount of avoided bread waste to over 25,000 kg per week. That is 1,300,000 kg of bread per year! 

Supply chain decarbonization and Scope 3 reductions
Proba facilitates the transformation of Bakkersgrondstof's sustainable practices into tangible financial assets through tradable carbon credits. By forming a collaborative alliance, Proba helps Bakkersgrondstof secure additional funding and engage with supply chain partners, who can reduce their Scope 3 emissions. This partnership translates circular efforts into viable financial assets, enhancing Bakkersgrondstof's impact in the fight against food waste.
